    Here’s the recipe:

    * 350g sugar (1+2/3 cups)
    * 120g flour (1 cup)
    * 75g cocoa powder (3/4 cup)
    * 1 teaspoon salt
    * 3 eggs, room temperature
    * 1 cup oil (you can also use melted butter instead)
    * 1 tablespoon vanilla
    * 1 tablespoon strong coffee
    * 200g chopped chocolate

    ​

    1. Preheat oven to 175 degrees C (350 degrees F).
    2. Combine the oil, eggs, vanilla and coffee and mix together well.
    3. Add sugar to the wet ingredients and whisk together well.
    4. Sift the flour, cocoa powder and salt into the wet mixture and whisk well.
    5. Fold the chopped chocolate into the batter.
    6. Pour into lined and greased oven-proof 20x20cm pan (8×8 or 9×9 inch).
    7. Bake for 30-40 minutes depending on desired consitency.

    Pro-tip: for a nice and glossy cracked top, sprinkle the chocolate ‘dust’ from the chopped chocolate over the top.

    Fudgy brownies are the only true type of brownie. If you bring around a cakey brownie, that’s just chocolate cake. Fight me on this.
