    I wanted to make some grilled sandwiches for lunch today but didn’t have any sauerkraut so I substituted and got some absolutely epic results.
    Start with your favorite aged cabbage Kimchi. Dice and squeeze out the excess water. Take your drained Kimchi and sauté over medium heat with a high quality dark Asian Sesame Oil. In a small bowl mix Mayo and Ketchup 1:1 and spread on two slices of whole wheat bread. Layer your pastrami and top with the sautee’d kimchi and top with a slice of Swiss cheese. Close sandwich and butter both sides and grill to melt and heat it all together. Profit.
